I like beetroot, in fact I love it but I’m the only one in our house who does. Why then, you may well ask, do I grow enough of the stuff to feed every household in Anglesey? It’s actually a very versatile vegetable, boiled, roasted, or pickled it’s delicious.
In truth, we did have a glut this year and there did come a point when I wasn’t quite so enamoured of the beet and only avoided beetrootgate by the skin of my teeth. Happily, a friend had given me a recipe for chutney and this, luckily, was the perfect medium for using surplus beetroot. Surprisingly, everyone liked it, so much so that the first batch vanished very quickly.
This week I cooked the third batch and I’m really happy to be able to donate it all to raise money for the Anglesey Hedgehuggles. This is a self-funded, home-based hedgehog rehabilitation organisation that looks after poorly, injured and orphaned hedgehogs.
