The rain is pelting down and with every downpour it is becoming more obvious that I’ll not be going out into the garden today, so we decide to make marmalade.
For us it has to be a three fruit marmalade made with Seville oranges, lemons and limes and much to mam’s dismay we like thick cut, the thicker the better!

The first step is to prepare the fruits by juicing, scraping out the pith with a spoon and then cutting the rind into thick strips.
If like us you make jam and chutneys it is well worth investing in a preserving pan. Pour in 2 litres of water and then simmer for 2 hours until the rinds are soft and tender.
After two hours a lot of the water will have evaporated, take it off the heat and leave it for about 5 minutes. Then add the sugar and give it a good stir then simmer it for further 15 minutes.
Put a small amount of the mixture on a saucer and put in the fridge for 3 minutes. Now draw your finger across the mixture, if it creases then it’s at setting point.
Leave for 15 minutes, this will stop all the rind floating to the top, then pour into sterilised jars and enjoy!
